Description

Transform humble Charlotte potatoes into spooky, edible works of art with this creative recipe. Each potato is intricately carved into a miniature face and roasted to a golden, crispy perfection. They are served alongside a vibrant, velvety ‘slime’ dip made from creamy avocado, sour cream, and fresh lemon juice. This festive snack offers a delightful balance of crunchy textures and tangy, rich flavors, making it the perfect showstopper for themed parties or a unique, fun appetizer that both children and adults will love.

Ingredients

8 medium Charlotte potatoes
3 tablespoons olive oil
1 teaspoon sea salt
2 ripe avocados
1/2 cup sour cream
1 tablespoon fresh lemon juice
1 clove garlic, minced
1/2 teaspoon black pepper

Instructions

Preheat your oven to 400°F (200°C).
Wash and dry the potatoes thoroughly.
Using a small paring knife, carve eyes, noses, and mouths into the potatoes to create faces.
Toss the carved potatoes in olive oil and salt until evenly coated.
Arrange the potatoes on a baking sheet and roast for 45 minutes until the skin is golden and crispy.
While the potatoes roast, mash the avocados in a bowl until smooth.
Stir in the sour cream, lemon juice, minced garlic, and black pepper until the mixture is creamy and uniform.
Serve the hot, roasted potato heads alongside the slime dip.

Notes

Select firm Charlotte potatoes for the best carving results. Ensure the faces are carved deep enough so they don’t fade during roasting. You can add a pinch of chili flakes to the dip for an extra kick if desired. Store leftover dip in an airtight container in the refrigerator for up to 24 hours.
