Ingredients
15 oz canned salmon, drained and flaked
1/2 cup panko breadcrumbs
1/4 cup finely diced bell pepper
1/4 cup chopped fresh cilantro
1 large egg, lightly beaten
1 tbsp lemon juice
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
3 tbsp olive oil for pan-frying
Instructions
In a large mixing bowl, combine the flaked salmon, panko, diced bell pepper, cilantro, egg, lemon juice, garlic powder, onion powder, salt, and pepper.
Mix the ingredients gently until well combined, being careful not to over-mash the fish.
Divide the mixture into 8 equal portions and shape them into patties approximately 1 inch thick.
Heat the olive oil in a large skillet over medium-high heat.
Place the patties in the skillet and cook for 3 to 4 minutes per side until they are golden-brown and crispy.
Remove from the skillet and drain briefly on paper towels before serving.
Notes
Ensure the salmon is well-drained to maintain the structure of the croquettes. For extra crispiness, you can lightly coat the outside of each patty in additional panko breadcrumbs before frying. Store leftovers in an airtight container in the refrigerator for up to 2 days.
