Ingredients

3 large eggs
1/2 cup sliced mushrooms
1 cup fresh baby spinach
1 tbsp butter or olive oil
1 tbsp milk
Salt and black pepper to taste


Instructions

Whisk the eggs, milk, salt, and pepper together in a small bowl until well combined.
Heat butter or olive oil in a non-stick skillet over medium heat.
Add the mushrooms to the skillet and sauté until golden brown and tender.
