Ingredients

2 tablespoons olive oil
1 medium onion, diced
2 medium carrots, diced
2 celery stalks, sliced
3 cups potatoes, peeled and cubed
1.5 cups diced turkey-based ham
6 cups chicken bone broth
1 teaspoon dried thyme
Salt and black pepper to taste
Optional: 1 cup fresh spinach or corn


Instructions

Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery to the pot and sauté until soft and fragrant.
Add the turkey ham and cook for 2 minutes to brown slightly.
Pour in the chicken broth and add the diced potatoes.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This soup also freezes well. To make it dairy-free, use olive oil instead of butter for sautéing the vegetables.
