Ingredients

3 lbs beef chuck roast, cut into large chunks
3 dried guajillo chiles, stemmed and seeded
3 dried ancho chiles, stemmed and seeded
1 white onion, chopped
4 cloves garlic
1 tsp ground cumin
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
4 cups beef broth (halal certified)
8 large flour tortillas
2 cups Oaxaca or Monterey Jack cheese, shredded
2 tbsp vegetable oil
Fresh cilantro and diced onion for serving


Instructions

Preheat your oven to 325°F (163°C).
Season beef chunks with salt and pepper, then sear in a hot pan with oil until browned on all sides.
In a separate pot, boil chiles in water until soft, then blend with onion, garlic, cumin, oregano, and a splash of beef broth until smooth.
Place seared beef into a Dutch oven, pour the chile sauce and beef broth over it.
Cover and braise in the oven for 3 hours until the beef is fork-tender.
Remove the beef, shred it with two forks, and strain the liquid (consommé) to remove solids.
Heat a skillet over medium heat, dip a tortilla into the top layer of the rendered fat from the consommé, then place in the pan.
Add shredded beef and cheese to one side, fold the tortilla, and sear until the exterior is crispy and the cheese has melted.
Serve hot with a side bowl of warm, strained consommé for dipping.

Notes

You can prepare the beef birria up to 2 days in advance and store it in the refrigerator. The flavors often improve after sitting. When dipping the tortilla, use the layer of fat that rises to the top of the chilled consommé for the best crispy crust. Always ensure your beef broth is alcohol-free and halal certified.
