Ingredients
8 large orange bell peppers
1 lb lean ground turkey
2 cups cooked basmati rice
1 cup black beans, rinsed and drained
1 small onion, diced
2 cloves garlic, minced
1 tsp dried oregano
1 tsp smoked paprika
1 cup shredded mozzarella cheese
2 tbsp olive oil
Salt and black pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and carefully remove the seeds and membranes.
Use a small paring knife to carve Jack-O’-Lantern faces into one side of each pepper.
In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until soft.
Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon.
Stir in the cooked rice, black beans, oregano, paprika, salt, and pepper; cook for another 2 minutes.
Stuff each pepper with the turkey and rice mixture and place them upright in a baking dish.
Cover with foil and bake for 20 minutes.
Remove the foil, sprinkle the tops with mozzarella cheese, and bake for another 5 minutes until the cheese is melted and bubbly.
Notes
You can add chopped spinach or diced tomatoes to the filling for extra nutrients. If the peppers are tipping over, slice a tiny bit off the bottom to make them flat. Store leftovers in an airtight container for up to 3 days.
