Ingredients
1 cup non-alcoholic butterscotch soda (reduced to 1/4 cup)
2 cups all-purpose flour
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
3 large eggs
1/2 cup buttermilk
1 cup butterscotch chips, melted
1 teaspoon vanilla extract
1/2 teaspoon butter extract
2 teaspoons baking powder
1/2 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×9 inch square baking pan.
In a small saucepan, simmer the butterscotch soda over medium heat until it reduces to 1/4 cup. Let it cool completely.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition, then stir in the vanilla and butter extract.
Whisk together the flour, baking powder, and salt in a separate bowl.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the flour.
Fold in the melted butterscotch chips and the reduced butterscotch soda syrup.
Pour the batter into the prepared pan and smooth the top with a spatula.
Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely on a wire rack before applying buttercream frosting.
Notes
Ensure your butterscotch soda is non-alcoholic by checking the label. For a more intense flavor, garnish the frosted cake with extra crushed butterscotch hard candies. Store at room temperature for up to 3 days or refrigerate for up to one week.
