Ingredients

2 lbs chicken breast
1 cup BBQ sauce
1 tbsp chipotle powder
8 slider buns
1 cup guacamole
1/2 cup red onion, thinly sliced
4 string cheese sticks
16 black olive slices
8 cucumber slices


Instructions

Place chicken breasts in a slow cooker and add BBQ sauce and chipotle powder.
Cook on low for 6 hours until the chicken is tender and easy to shred.
Shred the chicken using two forks and mix well with the sauce.
Slice slider buns in half and spread a layer of guacamole on the bottom half.
Top with shredded chicken and a slice of red onion to look like a monster mouth.
Place the top bun on and create eyes by sticking two pieces of string cheese into the top with an olive slice on each.
Use cucumber slices as additional monster features if desired.

Notes

Ensure the BBQ sauce used is alcohol-free and pork-free. You can make these ahead of time by keeping the chicken warm in the slow cooker and assembling the buns right before serving to keep them from getting soggy.
