Ingredients

1 tbsp olive oil
1 lb ground turkey
3 cloves garlic, minced
1 tsp dried oregano
1/2 tsp crushed red pepper flakes
4 cups vegetable broth
12 oz penne or fusilli pasta
4 cups fresh baby spinach
1/4 cup grated parmesan cheese
Salt and black pepper to taste


Instructions

Heat olive oil in a large deep skillet or pot over medium-high heat.
Add the ground turkey and cook, breaking it into crumbles, until browned and cooked through.
Stir in the minced garlic, oregano, and red pepper flakes, cooking for 1 minute until fragrant.
Pour in the vegetable broth and bring to a simmer.
Add the pasta, stir to combine, and cover the pot.
Reduce heat to medium-low and simmer for about 10-12 minutes, or until the pasta is al dente and most of the liquid has been absorbed.
