Ingredients

1 1/2 cups graham cracker crumbs
1/3 cup unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla extract
1 cup whipped topping, thawed
1 small box (3 oz) strawberry gelatin
1/2 cup boiling water
1/2 cup cold water
1 cup crushed strawberry sandwich cookies
2 tbsp melted butter for crunch topping


Instructions

Combine graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
Chill the crust in the freezer for 10 minutes.
Dissolve strawberry gelatin in boiling water, then stir in cold water and set aside to cool.
Beat softened cream cheese, sugar, and vanilla extract until smooth.
Fold in the whipped topping until fully combined.
Pour the cream cheese mixture over the chilled crust and smooth the top.
Pour the cooled gelatin mixture carefully over the cream cheese layer.
Refrigerate for at least 4 hours until fully set.
Mix crushed strawberry cookies with 2 tbsp melted butter to create the crunch topping.
Sprinkle the crunch topping over the cheesecake just before serving.

Notes

Ensure the cream cheese is at room temperature to avoid lumps in the filling. For a firmer set, you may refrigerate for up to 6 hours. Store leftovers in an airtight container in the refrigerator for up to 3 days. Do not add the cookie crunch topping until right before serving to keep the cookies crispy.
