Description

These smothered ground beef burritos are a comforting, restaurant-quality Tex-Mex meal that elevates the humble burrito into a decadent experience. Featuring savory seasoned ground beef wrapped in soft flour tortillas and drenched in a smoky, velvety chipotle cream sauce, each bite is perfectly balanced by melted sharp cheddar cheese. Ideal for busy weeknights, this dish delivers bold flavors and satisfying textures that will please the entire family, all while remaining surprisingly simple to assemble and bake.

Ingredients

1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 tsp cumin
1 tsp chili powder
4-6 large flour tortillas
1 cup sour cream
2 tbsp chipotle peppers in adobo sauce, minced
1/2 cup heavy cream
2 cups shredded sharp cheddar cheese
Salt and black pepper to taste
Fresh cilantro for garnish

Instructions

Preheat your oven to 375°F (190°C).
In a large skillet, brown the ground beef with the onion and garlic over medium-high heat until cooked through.
Drain excess fat, then stir in cumin, chili powder, salt, and pepper; remove from heat.
Spoon the beef mixture into the center of each flour tortilla, roll tightly, and place seam-side down in a baking dish.
In a small bowl, whisk together the sour cream, heavy cream, and chipotle peppers until smooth.
Pour the chipotle sauce evenly over the arranged burritos.
Top with the shredded cheddar cheese.
Bake for 20-25 minutes until the sauce is bubbly and the cheese is melted and slightly golden.
Garnish with fresh cilantro before serving.

Notes

Ensure you fold the burritos tightly to prevent the filling from leaking before they hit the oven. For a milder version, reduce the amount of chipotle peppers. Leftovers can be stored in an airtight container for up to 3 days and reheated in the oven.
